Paczki - Polish Donuts (Easter Extravaganza)

 

Paczki (Polish Donuts)

Ingredients: 

  • 3 cups flour
  • 1 cup milk (warmed to 120°-130°F)
  • 4 egg yolks
  • 3 tbsp melted butter 
  • 2 tsp active yeast 
  • 1/3 cup granulated sugar 
  • 2 tbsp rum
  • 1/2 cup all purpose flour (for dusting)
  • Vegetable oil for frying
  • Fruit jam, or filling of choice
  1. In a large mixing bowl add your flour, sugar, yeast, egg yolks, milk, butter and rum. 
  2. Using a dough hook mix on low for 1 minute, or until the flour has been incorporated.   Next you turn up the mixer to a medium/ high speed and let it mix for 5 to 7 minutes, or until the dough is smooth and slightly pulling away from the bowl.
  3. Take a damp towel and drape it over your mixing bowl of dough, and let it rest for approximately 10 minutes in a warm area. We used the proofing setting on our oven. 
  4. After 10 minutes is up, you are going to gently knead the dough for about 1 minute. Place the towel back on top, and place back in your warm area to proof for 45 minutes.
  5. Preheat your deep fryer or oil in a pot to 350°F. Once done proofing, lightly dust your counter and roll out the dough to about ½ inch thick.
  6. Using a cookie cutter, cut out your donut shapes, about the size of a hockey puck.
  7. Gently place your dough rounds into your preheated deep fryer, and cook for 2-3 minutes per side.  
  8. Let the doughnuts drip and cool on a wire metal rack.  
  9. Once cool, using a piping bag, fill each doughnut with your filling of choice. Then you dust the donuts with icing sugar, and Enjoy!

(The rum is optional,  but it helps the donuts to not absorb as much oil during frying)
